The island of Kalymnos boasts many top-quality products, with honey featured prominently among them. Kalymnos has been highly praised for its honey since antiquity, and its reputation has surpassed the limits of this remote island as there have even been poets and historians who have referred to it with great admiration and enthusiasm.
But what makes it so special? The answer lies in its fragrance and rich flavor. Like many small islands in southern Greece, Kalymnos is characterized by dry summers and a rocky terrain favoring the growth of such aromatic herbs as thyme, oregano, savory and sage, rich in essential oils. The collection of honey from the beehives is still carried out in the traditional way, and the result is an amber-colored honey that combines these aromas to a particular sweetness.
Taking this into account, it is no wonder why the production of honey used to be one of the main economic activities on the island, along with sponge diving. Especially now that scientific research has begun to shed light on the many therapeutic properties of thyme honey, demand for pure, unadulterated and richly-flavored products is on the rise. Thus, visitors cannot leave the island without tasting this special honey, which will take them on a unique gastronomic journey to the very essence of the Greek countryside.
