Santorini Fava: Information about the Fava Beans of Santorini Greece, Cyclades

Santorini Fava Beans: The Fava Beans is one of the most special and traditional products of Santorini. A kind of peas with yellow colour, this product comes from the fruit Lathyrus Clymenum and it is cultivated exclusively in Santorini and Anafi, a small island next to Santorini. The volcanic soil is probably the reason why this product is cultivated only in Santorini from all Greece and it is considered as the most traditional product of the island.

Surprisingly enough, archaeological excavations have revealed

grains of fava from the ancient site of Akrotiri, on the southern side of Santorini, which shows that this product is cultivated on the island for about 3,500 years. Fava beaches are sowed in December and harvested in June. Through a natural process, the beans are matured for a year in underground storehouses, then they are dried in the sun, cleaned, pelled and sliced. Fava beans are sold not only in Santorini but all over Greece and sometimes it is exported abroad.
