Fried Cheese Pies

While in other Greek areas, the housewives use to bake the cheese pies in the over, on Skopelos, they fry them. Skopelos cheese pies are simple in preparation and have only goat cheese as their filling.

For the pastry
- 1 kg wheat flour
- 1 spoonful of olive oil
- 1 teaspoonful of vinegar
- some salt
- water

For the stuffing
- ½ kg of goat cheese
- starch flour

In a bowl, mix the wheat flour with the rest of the ingredients and leaven well. Leave the pastry for a while, so as the ingredients are mixed together.
Pour some starch flour on a surface and open one by one the pastry in thin layers.
Pour some olive oil on one of the pastry leaves. Smash the cheese in your hands and spread it on the 1/3 of the pastry’s surface, so as to cover a shape of a half circle.
Fold the pie closing inside the filling and coil it. Fill and coil in the same way the other pastry leafs.
Now fry one by one the cheese pies in both sides. The frying pan must have plenty of oil. Once they get a dark golden color, put them off the pan by a skimmer.
