Octopus With Fava Mousse

This traditional recipe could easily be found in Santorini, since fava is mostly produced there. However, it is a recipe of Skiathos and, in fact, a very delicious fish dish.

- 1 and a half kilo of octopus
- 500 gr fava
- 3 cloves of garlic
- 2 chopped onions
- some mustard
- some honey
- some white vinegar
- olive oil
- fresh rosemary
- salt and pepper

Heat the olive oil into a casserole. Add one of the two chopped onions and fava to saute. Blend until the casserole is dry. Add some water until you cover the mixture and then leave it to boil for about 30 minutes until it becomes a mash. You empty the casserole into a blender, grind well and then put it aside. Now you prepare the octopus. Put the other chopped onion into a pan, some water, a lot of olive oil and open the hot plate. Leave it to boil for a while. Then add the garlic, the rosemary and the whole octopus. Leave it to boil with the rest of the ingredients and then turn it to boil from the other side. Add the vinegar and leave it to boil with all the ingredients for at least one hour. While the octopus is boiling, you prepare the sauce. In a small bowl, blend mustard, honey and water and then pour the boiling octopus with the sauce. Leave it to take the taste of the sauce and when it is ready, you serve it with fava.
