Spetses Fish Spetsiota

The local food fish a la Spetsiota from Spetses: Fish a la Spetsiota is a delicious dish of Spetses Island. It is a local specialty with fresh fish as the protagonist. The recipe is, in fact, a variant of the classic fish pilaki (fish cooked in a tomato sauce containing olive oil, onion, garlic, carrot, and potato). The classic edition of Fish a la Spetsiota is made with common dentex or white grouper, but other fish like amberjack, croak, and dusty grouper.

The fish fillets, dried with absorbent paper and sprinkled with flour, are marinated in lime juice and ground pepper for nearly two hours. Then, the fillets are spread on breadcrumbs and topped with breadcrumbs and tomato sauce freshly made with sautéed garlic and onions in olive oil.
The dish is baked basting occasionally in its juices and, when it comes out of the oven, the whole kitchen smells like heaven!
