Recipe of Rizopita Rice Pie

Rice Pie is a quite rare and special kind of pie in Greece. It is a traditional recipe of the island of Lefkada and its preparation is easy. If you want to make the filling more tasty, you can add some walnuts or raisins.

- 6 or 8 eggs
- 2 teacups of rice
- 6 teacups of milk
- 2 teacups of water
- 200gr feta tea
- some sugar (optional)
- some butter
- salt

Boil the milk with the water and then add the rice. Do not boil the rice excessively. Cream the eggs and add gradually the rice. Then add the feta cheese, the butter, the sugar and the salt and blend well. Spread the baking pan with olive oil or butter, sprinkle the pan with feta cheese and then spread the mixture on top. Bake the pie in preheated oven for about one hour. When it is ready and hot, sprinkle with cinnamon powder.
