Recipe of Egg Pie

Egg Pie

This recipe is traditional of Lefkada and it is prepared during the Carnival period on the island. Its preparation is easy and quick. This pie is called avgopita in Greek.

- 7 or 8 filo pastry sheets
- 12 to 15 eggs well scrambled
- 1 can of evaporated milk or ½ kilo of fresh milk
- 1 cup of olive oil
- ½ cup of butter
- 1 kilo of sfina cheese or any other hard Greek cheese

First of all, make the filo pastry sheets and leave them aside for a while to prepare the other ingredients. Scramble the eggs well and add the milk. Cut the cheese in small pieces with a knife. Put the largest filo pastry sheet in a pan covered with olive oil, so that this sheet shall roll all the other sheets. Spread some olive oil and butter on the pastry sheet and with a spoon throw some scrambled eggs and some cheese. Do the same with all the pastry sheets. Then roll the edges of the sheets so that they are rolled in the inside of the pan and that they are not left over the pan. Baste the upper sheet with egg and butter so that it has a piecrust. Sprinkle some drops of water on the pie and pick with a fork in various sides of the egg plant. Bake the pie in medium temperature (about 180oC) for about an hour.
