Recipe of Pastitsada


It is a traditional corfiot dish, mainly made with rooster meat or beef. You can find it in all restaurants of Corfu or just prepare it yourself.

- 1 kilo of beef cut in portions
- 100 gr of olive oil
- 1 spoonful of butter
- 3 onions julienne
- 2 cloves of garlic
- ½ spoonful of cinnamon and clove in powder
- spicery in powder
- nutmeg
- some parsley
- 100gr of dry white wine
- 300 gr of chopped tomatoes
- 1/2 spagetti No4 or No5
- parmesan minced
- some sugar

Boil the olive oil and butter into a casserole and saute the onions for 3-4 minutes. Add the garlic and the meat. Brown the meat in both sides. Add the wine and then the chopped tomatoes, the spicery, the sugar, salt and pepper. Cover the casserole and leave it to boil for about an hour. In the meanwhile, boil the spaghetti in salty water, strain them and sprinkle them with the parmesan cheese. Then pour the meat over the spaghetti and powder some parsley above.
