Description
Stuffed bell peppers

Ingredients
Casing:
- 6-10 bell peppers (capsicums). You could also use zucchini (courgette), tomatoes, or eggplant (aubergine).

Filling:
- 750g (1.6 lb) minced meat, beef or lamb
- 1 or 2 onions, chopped
- 2 garlic cloves, crushed
- 1 can (400g, 14 oz) tomatoes, crushed or diced
- 2 heaped Tablespoons tomato paste
- 1 bunch parsley leaves
- 1/2 bunch mint leaves
- 1/2 cup rice, short or medium grain
- 1/2 cup water
- Olive oil
- Ground cinnamon, salt & pepper to taste
