Honey Pie

The honey pie (or else "melopita" in Greek) is a traditional sweet pie of Sifnos, easy and quick in preparation.

- 1,000 gr of anthotyro (unpasterized fresh cheese)
- 1 glass of honey
- 1 ½ glass of sugar

In a large bowl, mix the cheese and honey and blend. Then add the sugar and the eggs one by one. Grind the mixture until it is mashed.

Prepare a pan with a bit of butter all over the surface, add some flour and spread the mixture on the pan.

Bake in a moderate oven at 200oC for about 45 minutes, until the pie is golden brown. Spread over cinnamon and cut in slices.
