Recipe of Potato Salad

This potato salad is very easy and very quick. In this version, we use traditional products of Santorini, but you can also prepare it with non-Santorini products.

(for four people)
- 4 or 5 large potatoes
- 6 or 7 dried Santorini cherry tomatoes
- 1 large spoon of pinecone seeds
- 2 spoonfuls of olive oil
- 4 or 5 small onions
- parsley
- pepper
- feta cheese (optional)
- Santorini capper (optional)

Wash and peel the potatoes. Boil them until they get soft. Get them off the hot plate, strain, wash them with cold water and cut in medium pieces.

In the meantime, we prepare the pulp of dried cherry tomatoes: mix in blender the dried tomatoes with the pinecone seeds and olive oil until they become a mixture.

Mince the onions and parsley.

Put all the ingredients in a salad bowl and mix adding some fresh pepper. Optionally you can add capper and feta cheese in the potato salad.
