Recipe of Fava


Fava is the most known recipe of Santorini. It is most of a soup dish. Note that fava legumes are also produced on Santorini. Fast and easy to prepare.

For fava:
- 500 gr of fava
- some olive oil
- salt
- 2 whole onions

For the dressing:
- lemon
- olive oil
- 1 onion julienne
- 1 tomato
- oregano/ caper

Wash fava 2-3 times. Put it into a casserole and cover it with a lot of water. Boil it and take special attention of the casserole when it boils because it blows up. Remove the froth and add some olive oil and salt. Then leave it to boil in low temperature for 60-80 minutes, until it mashes. After this, put it into the multi and add the whole onions, until it becomes a crème. Serve it with some oil on the top, lemon, pieces of onion and tomato and some oregano or caper.
