Recipe of Baked Cod In White Sauce

This is a traditional fish dish for everyday cooking. As fish is very frequent in Crete, this dish can be found in many taverns.

- 1 kilo of unsalted cod, cut in slices
- 1 kilo of potatoes cut into pieces
- 1 dry sliced onion
- 2 cloves of garlic (julienne cut)
- fresh parsley
- 3/4 water glass of olive oil
- 1 spoon of flour
- juice of 2 lemons
- salt and pepper

Start by putting the olive oil, the onion and garlic into the casserole and then saute for few minutes. Add the potatoes and some boiled water until it covers them and leave the food to boil, till the potatoes are light brown. Add the cod, some salt, pepper, parsley and leave them for ten minutes. Mix the lemon juice with the flour and add a cup of the sauce that should be ready by now. Those three should be mixed together very well. When this is ready, put the mixture into the casserole and mix well. The dish is served hot.
