Spetsofai
This dish is served hot and is usually prepared in winter. You are most likely to find it in country, mountainous villages.
Ingredients:
- 1 kg green peppers
- 4 country sausages
- 1 kg ripe tomatoes
- 2 onions finely cut
- 1 ½ cup of olive oil
- salt and pepper
Preparation:
Wash and strain the peppers. Fry them in the olive oil (1 cup), but do not leave them too long, so as not to become too red. Take them off the pan and fry the sausages (cut in two pieces). As soon as they are fried, get them also off the pan and add the rest of the oil (1/2 cup). Then you put in the tomato mash (after you have peeled and mashed them very good), the onion and bit of salt. Leave the sauce boil slowly for 20 minutes. Put then the peppers and the sausages and leave the spetsofai boil in low temperature, until it stays with a thick sauce.
