It consists of cured fish roe, and although it is not as refined as caviar is, there are some similarities between them.
Botargo is made of the roe pouch of fish like tuna or grey mullet, and sometimes of swordfish. The process starts with a massage given to the pouch in order to eliminate air pockets. Then, it is dried and cured in salt for several weeks. The dry hard piece that results from that process is covered with beeswax, and tastes like caramelised salt-fish. Then, it is served in thin slices, or it can also be grated.
Serving botargo pieces as an appetiser is pretty common in here and it is garnished with lemon juice. In addition, it can be included in some delicious Greek dishes. It can also be served with raw onion, accompanied with some of the quality red wines that characterises this area, and the ones nearby. When it comes to non-alimentary products, one of the best exponents is the textiles of Etoliko, whose elaboration is part of the traditions of the place.
Therefore, some interesting works can be appreciated in the Folklore museum, although some other great works can be purchased in the local shops. The traditional rugs are also very valuable and worth purchasing them.
