Goat With Artichokes

This is traditional recipe of Skopelos and you can find it in many taverns on the island. If you don't like goat, you can try it with beef.

- 1 kilo of goat cut in pieces
- 1 cup of olive oil
- 2 onions of medium side julienne
- 1 glass of white wine
- 2 chopped tomatoes
- 1 spoon of tomato juice
- lemon juice
- 5 or 6 artichokes
- 6 small onions julienne
- chopped fennel
- chopped parsley
- salt and pepper

Put the goat pieces in a casserole and let them to boil for a while. Then wash them in strainer. In another casserole, put the olive oil and then suate the goat pieces. Add the 2 medium onions and suate them, too. After a while, add the chopped tomatoes, the tomato juice, salt and pepper, one glass of water and the white wine. Cover the casserole and leave it to boil for about 2 hours and a half. In the meanwhile, squeeze a lemon in a bowl filled with water and throw in the artichokes, cleaned and cut in half. Once the goat is boiled, add the 6 small chopped onions, the parsley, the fennel and then the artichokes. Mix all the ingredients and leave them to boil for another 20 minutes.
