Recipe of Sofrito

This is one of the many traditional dishes of Corfu. As most corfiot local dishes, it dates back from the Venetian times.

- 1 ½ kg boneless beef fillets (leg part preferred)
- 1 onion, finely cut
- 2 garlic cloves, mashed
- 1 tea cup of white wine
- 2 bunches of parsley, finely cut
- 1 piece of meat brewis
- salt
- pepper
- olive oil for frying
- some flour
- 1 tea cup of vinegar

Put the meat in a pot and saute it in middle temperature with the olive oil. Dredge the pot with the flour and stir the meat with a wooden tablespoon, so as not to stick. Add the garlic and when it turns yellow, add the vinegar and wine. After that, add also the meat brewis, the parsley and 1 ½ cup of water. Boil the food about an hour and a quarter.
