Tzatziki
Tzatziki is the most prefered sauce among the Greeks and it is also very popular to tourists. It has a slightly spicy taste and usually accompanies meat dishes. Here is a quick and easy version of its preparation.
Ingredients:
- 400gr of yogurt
- 1 cucumber
- 1 tablespoon of vinegar
- 2 tablespoons of lemon juice
- 1 tablespoon of olive oil
- 1 garlic julienne
- salt
- black pepper
- parsley or dill
Preparation:
Put the yogurt onto a paper cloth on a bowl and leave it until it strains the water. Peel the cucumber and chop it into very small pieces. Then powder the cucumber pieces with some salt, put them onto a paper cloth on a bowl and leave them to strain for about 15 minutes. Later on, mix the yogurt, the cucumber pieces and all the other ingredients into a bowl and blend them well. Preferably use a wooden ladle for the blending. You can serve it immediately or put it into the refrigerator for a few hours to chill. It is served as a dip, chilled or in room temperature.
