Stuffed Squids
You are most likely to try stuffed squids in Greece in summer, when seafood is prefered. This dish is not so widely-known and takes some effort to prepare it, yet the result is delicious.
Ingredients:
- 1 kilo of cleaned squids
- 350gr of artichokes, with their hearts julienne
- 150 gr of leek julienne
- 4 onions julienne
- 1 spoonful of anise julienne
- 1 spoonful of caper
- 1 spoonful of rice
- 2 spoonfuls of lemon juice
- 2 tomatoes peeled and chopped
- 1 cup of olive oil
- 1 cup of white wine
- salt and pepper
Preparation:
Wash the squids well and leave them aside for a while. Saute the artichokes, the leek, the onions, the anise and the caper with half the cup of the olive oil. Once they soften up, add the rise, the lemon juice, the tomatoes and some wine. Let the mixture boil for a while. Stuff the squids with the mixture and put them in the casserole with the rest of the olive oil. Add some more wine and boil the squids in low temperature, until they are very soft. They can be served both cold or hot.
