Recipe of Strapatsada

Description
This recipe is actually a kind of tomato omelette. It is quick to make and tasty. You can prepare it all year round.

Ingredients
- 2 eggs
- 1 chopped onion of medium size
- 1 big tomato cut in small pieces
- olive oil
- salt and pepper
- feta cheese
- parsley

Preparation
Saute the chopped onion into the olive oil. Scramble the eggs and add them into the pan with the chopped tomato, the salt and pepper. Mix well until the juice evaporates. This dish is served hot, sprinkled with minced feta cheese and parsley.
