Greece Recipes: Stifado

Stifado

This dish is actually boiled rabbit. It can be also made with beef, but the typical stifado is always made with rabbit meat, which is more delicious.

Stifado Ingredients:
- 1 rabbit
- 3 kilos of small onions
- 1 dry onion finely cut
- 1 cup of oil
- 2 bay leafs
- 1 small cup of vinegar
- 2 spoonful tomato paste
- 3 mashed tomatoes or one can
- 2 garlic gloves
- 4 spice bullets
- salt, pepper


Preparation:
Cut the rabbit in portions and put it in a bowl with the vinegar and one glass of water and leave it there over the night. In this way, the meat gets very soft and the heavy smell disappears. You can also put the small onions in a bowl with water, so as to peel them easier the next day and without tears.

Boil the onions in a pot (to boil 2-3 times) and get them off the fire. Trough away the water, put the oil in the pot and when it is hot enough, add the dry onion finely cut, the garlic gloves also cut and the rabbit portions and sauté them. Then add the tomatoes, the tomato paste resolved in a glass of water and the salt and pepper. Boil for 20 minutes. Add the small onions, the bay leafs and the spice and shake the pot slightly. Do not stir because the small onions will melt. You only shake the pot and check regularly if it has enough water. Add a little bit of water if there is need to.

Boil in low temperature (1.5), until the meat gets very soft and can be easily removed from its bone. It takes about 40-60 minutes after adding the small onions.

The whole cooking procedure takes about one and a half hour.
