Recipe of Skoldalia


Skordalia is actually garlic sauce. It is generally a spicy dish but if you prepare it yourself, you can make it as spicy as you want, depending on the amount of garlic, olive oil and salt you shall add. It is a very popular sauce in Greece and you can ac

- juice from one lemon
- 1 cup of olive oil
- 3 to 5 cloves of garlic
- 3 big potatoes
- 50 gr of olives
- salt

Wash well the potatoes and then boil them in salted water with their peel. Boil for about 40 minutes, until they are very soft. Remove the peel and mash the potatoes well to make them puree. Then mash the cloves of garlic and mix it with the puree. Add the olive oil, the lemons juice and some salt. Mix very well. You can serve skordalia with olives and parsley.
