Gemista
Gemista is actually stuffed tomatoes, peppers, marrows and eggplants. It is a summer dish and it is better tasted when it is cold.
Ingredients:
- 12-15 tomatoes, green or red peppers, marrows, eggplants or whatever you like
- olive oil
- 200 gr. rice
- 4 onions
- 4 garlic cloves
- 2 carrots
- 1 skein of finely cut parsley
- some peppermint and fennel (optional)
- some crumbled rusk
- potatoes
- salt and pepper
Preparation:
First of all, cut off the top of the vegetables and empty them. Do not throw away the pith; keep it, along with the cut pieces from the vegetables. Put the vegetables in a baking pan and dredge them internally with some salt, pepper and some sugar. Cut finely the carrots, the onions, the garlic, the parsley, the peppermint and the fennel and put them together with the pith kept from the vegetables.
Put them all in a pot and some olive oil, water, the rice, salt and pepper and leave them boil (this is optional, boiling can be left out). Stuff the vegetables, cover them with their tops, pour some oil over them and dredge them with the rusk.
Then, peel the potatoes and cut them in pieces. Put them in the pan between the stuffed vegetables and add salt and pepper (to the potatoes only. In case there is some filling left, you can pour it also over them. Bake for an hour at 180 grades.
