7 days in grece? HELP!!

we are going to greece,
flying in to athens.
we will spend a couple of days there, but we would also like to visit one of the islands.
any advice on which one we should visit? i've heard they are all beautiful, but have no personal experience. also, which attractions should not be missed? we have a limited time.

Lots of islands, definitely.
In few words:
Santorini: one of the most beautiful and impressive
Mykonos: Amazing beaches, cosmopolitan and party
Naxos: Less touristy than the 2 above. Amazing landscapes, excursions, villages.
Milos: Authentic, amazing landscapes and beaches
etc, etc, etc...

There are many islands and each one has its own character and activities. Maybe if you could tell us what kind of holidays you like, then I could also be more specific concerning some islands.

we would like to take a cultural trip; eat greek food, etc. we want it as authentic as possible.

also, we were wondering if it is possible to go to beaches and swim in may? we've heard the temperature in may isnt great, and we wanted to make sure that was right.
