I stayed there last year, and they are lovely. Stelios, the owners son in law is a great guy.
We stayed at the Yadim just over the road this year - not quite such a high quality but very clean and the bar is a bit of a meeting place.
Kolios (AKA Aghia Paraskevi - they run into each other) is very quiet but it's easy to get around the island by bus or taxi.
Kolios beach is nice, with a beach bar & a taverna. Aghia Paraskevi has a bigger beach but no taverna, surprisingly, just a rather upmarket restaurant owned by the Skiathos Princess hotel, which dumps all its rubbish on the track that runs alongside it to the beach, rather ruining its 5 star image.

The Marina does have a bar but it tends to be quite quiet early in the season. All are welcome at the Yiadim bar just opposite. There are a few tavernas in Kolios/Aghia Paraskevi - they'll just be opening up for the season when you get there. Jimmy's is nice, and Kohili. Infinity Blue is a bit more upmarket & priced accordingly, Green Park was nice last year but we were disappointed this year. Platanias is nice too.
You'll find it very quiet in May, but like I said, jump in a bus/taxi to Skiathos town and there are loads of bars/restaurants/tavernas.
One tip - if you plan a boat trip, book it at the harbour, not with the rep. It's cheaper and the boats have english speaking commentary on board. We did a day trip to Skopelos & Alonissos this year - saw loads of dolphins.
Where did you stay in Halkidiki? We went to Polichrono a few years ago. I think if you liked Halkidiki you'll like Skiathos.

I can't remember where we stayed - it was 6 years ago. The hotel was near the main road at the back of the resort.
Kolios is much quieter than Polichrono, and doesn't have a promenade. It's nice though, and as I said if you find it too quiet there's all the nightlife you could need in Skiathos Town.
