Recipe of Squids With Rice

Squids with rice is a very popular dish all over Greece. The difference with this recipe of Rhodes and the other Greek recipes for squids and rice is that in this one the ink juice is actually added in the dish.

- 1 ½ kg squids, well cleaned
- 1 bowl with the ink of the squid (sepia)
- 1 cup of olive oil
- 1 big onion finely cut
- 2 garlic gloves finely cut
- 1 glass of white wine
- 400 gm tomato juice
- salt, pepper
- 200 gm rice

Clean carefully the squids and in a bowl put off their ink. Cut the squids in pieces and wash them of.
Put the oil in a pot and add once it’s hot add the onion and the garlic. Sauté them and add the squids to be sautéed, as well.
Put the wine in the end and stir slightly. Add the tomato juice.
In the meanwhile put the ink in a small glass of water and strain it. After that, put it in the pot with the squids and stir. Leave it until it boils.
Add in the pot 3 cups of water and put in the rice. Stir, add salt, pepper and leave it boil until not much of the juices is left.
