Recipe of Red Liver

Description
This recipe is mostly made in the villages on the southern side of Rhodes island and serves as hors d’oeuvre.

Ingredients
- 1 caprine liver or beef liver or lamb liver or pork liver
- 2 or 3 onions cut in slices
- 2 or 3 tomatoes cut in small pieces
- ½ cup of olive oil
- 3 or 4 cloves of garlic
- salt and pepper
- cumin
- 2 leaves of laurel

Preparation
Cut the liver in very small pieces. Saute the olive oil into a saucepan with the chopped onions. Then add the pieces of liver, saute them well and add the rest of the ingredients. Leave them to boil in medium temperature for about 40 minutes.
