Our room was in a walking distance (not more than 5 min) from the relaxing beach of Vathy, so we would go there every morning. Faros is actually a small fishing village, but it was hell crowded this July, when we went to the island! I believe Platis Gialos is the most popular place on Sifnos. You will see mnay young people there having a drink at the beach bars and most of them are very friendly and would easily have a chat with you.
