I really liked the volcano on Santorini and archaeological sites (its one of the main reasons I visit Greece). I was a bit disappointed that Akrotiri was closed. Reopen Akrotiri as soon as possible. Also have longer opening hours for museums, for example in evening. Our hotel was on the edge of the caldera in Firostefani and having breakfast overlooking the crater was a memory that will last a lifetime. As we were out of the main season, Santorini was very peaceful and the weather was perfect. Very dry and cloudless but not too hot or crowded. Food was a bit expensive in Fira, but we did travel out to some of the other villages where the food was better and less expensive. One taverna in Akrotiri was reasonably priced and the food was very good. But I forget the name.
My main recommendation it to try and visit Santorini (or anywhere else in Greece) outside the main season. Come in May, June or September. The weather is nicer and it is less crowded and an altogether much better holiday. I've been to Greece several times off season and always found it really enjoyable. I've also been a few times in the high season (August) as I have children. I've enjoyed the holidays but find it a bit crowded, more expensive and too hot.
