The town of Oia on Santorini is fantastic. It is somewhat less touristy then Fira. A lot of people go to Oia to watch the famous sunset, which is a must see. In terms of beaches, I prefered Kamari compared to Perissa as it has more shops, restaurants, bars etc. Perissa I think does have cheaper accommodation, but there are areas of the beach which are quite slippery where you enter the water. Red beach is also worth a look at due to the red cliffs situated behind the beach.
In all of Greece, I had the cheapest meal in a taverna in Perissa. The taverna do seem to serve the same kind of meals no matter where you are in Greece, ie moussaka, stifado, stuffed tomatoes, etc. You will have quite a large selection of bars no matter where you go, and a lot have TV, such as Sky sports and will play important sporting games etc. One note, you will always pay more for places along the beach. I suggest going inland a little where you will find better prices and in lot of cases better service.
During summer months, I believe the services are good. They have regular buses to beaches and towns. All the buses are fairly new and are more like coaches. Be prepared to be packed in though during busy periods. However, I highly recommend hiring a scooter or quad bike and exploring the island. From one end to the other would probably only take you about 40 mins. It is a great and fairly cheap way to see everything.
