Melitinia Cookies
Melitinia in Santorini are the sweets of marriage, engagements and festivals. They are made of unsalted mitzithra cheese and yogurt and they have a beautiful smell of mastic. You can find them in the traditional bakeries of Santorini.
Ingredients:
For pastry:
- 1 kilo of flour
- 3 albumen (white part of egg)
- 2 spoonfuls of butter
- some milk
- salt
For filling:
- 1 kilo of unsalted mitzithra cheese
- 1 kilo of sugar
- 2 spoonfuls of flour
- 3 egg yolks
- 2 spoonfuls of butter
- 2 spoonfuls of powdered mastic
- 2 vanillas
Preparation:
Blend flour, salt, melted butter and the albumen mixed. Work well and add some milk, so that the pastry is soft. Open the pastry is sheets is 2 cm fat and cut some small, round pies (with a cup or a round pastry tool). Mix mitzithra cheese and sugar. Add the egg yolks one for one, the butter, the flour, the mastic and the vanilla, while we continue blending. When the filling is ready, take some filling and put it on top of a round pie and turn their edges a bit, as if you create a lace. Garnish with some cinnamon and bake in medium oven (180oC) for 30 minutes.
