Recipe of Sweet Cheese Pie

Sweet cheese pie is an appetite particularly popular in Cyclades. Here we present you the recipe version of Paros, while you will find this dish in almost all Cyclades with a few changes in the ingedients. The preparation is easy and fast.

For the filling
- 500gr of cream cheese saltless
- 10 eggs
- 1 can of evaporated milk
- 3 tea cups of sugar
- 1 spoonful of cinnamon

For the pastry
- 500gr of flour
- 1 spoonful of baking powder
- 1 cup of olive oil
- 1 cup of orange juice
- ½ spoonful of salt

Mix the olive oil, the orange juice and the salt into a bowl. Add slowly the flour and the baking powder until it becomes pastry. Then give the pastry a round shape, cover it with a cloth and leave it in the fridge for a couple of hours. In the meanwhile, melt the cream cheese, adding the milk and the cinnamon. Use the blender to mix the eggs with the sugar and then add them in the cream cheese mixture. Blend well. When the two hours pass, get the pastry of the fridge and cut it into small round pieces. Fill the middle of the pieces with the mixture, while putting up the round edges of each piece. Spread a baking pan with some olive oil, put the pieces on it and bake them at 200oC for about 45-50 minutes.
