Brown Walnut Pie

This walnut pie is known as "melachrini" in Naxos and it is a popular traditional pie.

For the pie:
- 10 eggs
- 2 cups of sugar
- 2 cups of chopped walnuts
- 2 cups of grated biscuit
- 1 sweet spoon of cinnamon
- 1 sweet spoon of powdered clove
- 1 small glass of citrus liqueur wine
- citrus pieces for decoration

For the syrup:
- 4 cups of sugar
- 2 cups of water
- 2 peels of lemon

Separate the yolks from the egg whites. Whip up the yolks with the sugar until they are thick and creamy. Scramble a meringue with the egg whites and then spread the meringue mixture onto the yolks to blend them all together.

Put the biscuit, the walnuts, the cinnamon, the clove and the liqueur until there are no ingredients left. Oil the baking dish and put the mixture on top. Bake at 180oC until it gets lightly brown.

At the same time prepare the syrup. Place the water and sugar in the pot, throw the flakes of lemon and let it boil until it is thick enough. Withdraw from fire. As soon as the walnut pie is baked, get it out of the oven and leave it outside for half an hour to drop the temperature.

Cut in small pieces and spread the syrup over it. Serve after about an hour.
