Onion Pie With Lard
This traditional dish of Mykonos is usually served in local feasts and tastes deliciously.
Ingredients:
For the pastry:
- ½ kg flour
- 1 small package of yeast
- Some olive oil
For the filling:
- ½ kg of sour cheese (traditional “ksinotyri” of Mykonos)
- 3 eggs
- 2 spoonful of olive oil
- half a bundle anise
- 1 big onion
- small pieces of finely cut lard
- small pieces of butter
Preparation:
Heat some of the olive oil and put it in a bowl with the flour. Stir and leaven very well, add the yeast and leave the mix to bloat, covered with a towel.
In the meanwhile prepare the filling. Graze the onion and add the sour cheese.
Add the anise, finely cut, and the eggs scrambled.
Take the pastry and unfold it with the rolling pin into two thick pieces.
Lay the one on an oil pan, so as that the edges project and put the filling on it.
On top of it put the lard pieces and the butter pieces.
Cover with the other part of the pastry and splice the edges to close. Bake in medium temperature for half an hour.
