Watermelon Pie

A delicious and refreshing pie for the summer! It is made not only in Milos but in other Cycladic islands, too.

- half watermelon (only the pulp)
- 4 or 5 large tablespoons of flour
- 2 large tablespoons of sugar
- cinnamon
- sesame
- 1 or 2 large tablespoons of olive oil
- 200 grams of honey

Take the seeds off the watermelon, cut it to pieces with your hands and leave it on a strainer for one hour to dry. Put it into a bowl, add the sugar and half the honey and blend them all together. While working the mixture, add slowly the olive oil and the flour, to become a mush. If it is too sparse add some more flour.

Lay some olive oil on your pan and spread half the sesame. Place the mixture on top and spread again with the rest of the sesame. Preheat the oven and bake the pie at 180o C for about 50 minutes. As soon as you take it out spread the honey and cinnamon.
