Recipe of Froutalia Omelet
DescriptionThis is probably the most representative dish on Andros. The special feature is that it is made of pork fat instead of butter or oil. It is prepared all year round and tastes deliciously.
Ingredients- 1 kg potatoes
- 4 or 5 eggs
- some milk
- 4 spoonfuls of pork fat
- 2 or 3 traditional Greek sausages
- some peppermint or marjoram
- 2 spoonfuls of minced cheese (local if possible or else hard, yellow cheese)
- salt and pepper
PreparationPeel and cut the potatoes in round shape. Put the pork fat in a pan and then the sausages and once it is melted, add the potatoes all together. Stir the potatoes until they get soft and roasted brown. In a bowl scramble the eggs and add the milk, the salt, pepper and the minced cheese, the peppermint or the marjoram. Pour the mixture in the pan and leave it until it is well baked from the one side. Then use a large plate or cover in the size of the pan and turn over the fourtalia, so as to be baked from the other side as well. Fourtalia is served in a round platter.
