Kaltsounia is probably the most traditional Cretan recipe. It is made all over Crete and it is unthinkable for a Cretan to invite to his place and not treat you some kaltsounia. You should know that the traditional recipe is made with mitzithra cheese.

Kaltsounia Ingredients:
For the pastry:
- 1 kilo of flour
- 1 and a half cup of butter
- 1 cup of sugar
- 1 cup of milk
- 2 teaspoons of baking ammonia
- 4 egg yolks

For the filling:
- 2 kilos of mitzithra cheese
- 3 cups of sugar
- the white part of one egg or 1 teaspoon of corn flour
- 2 spoonfuls of rosewater

For the spreading:
- 1 egg yolk
- cinnamon powder

Preparation:
Put the flour, the sugar and the butter together into one bowl and mix them well. Add the egg yolks, the baking ammonia and the milk and continue mixing. Once the pastry is ready, we give it a large round shape. Then blend the white of the egg and mix it with the mitzithra cheese and the sugar. Cut the pastry into round pieces with the pizza cutter. In the middle of each piece, put some filling. Using your fingers, shape it like a small bowl with the edges up. Before you bake them, spread some egg yolk at the surface of each kaltsouni and sprinkle some cinnamon powder. Bake at medium temperature (180oC) for about 50 minutes.
