Recipe of Braised Rabbit

This is a common dish in Crete and other parts of Greece. It is prepared as an everyday meal. If you can't find rabbit, you can alternatively use chicken.

- 1 rabbit
- 2 onions
- 3/4 red tomatoes
- 1 cup of olive oil
-½ cup of red wine
- salt
- pepper

- Wash the rabbit, cut it into portions and let it strain.
- Heat the olive oil in the pan and saute the meat until it is golden brown.
- Burn off with red wine and add the roughly-cut onions, the tomatoes, salt and pepper and if needed a cup of water in the pan.
- Turn the heat down and let the meat braise for some minutes. While you're checking it, you may have to add some water.
- After the meat has melted and the sauce is ready, turn off the heat and serve the meat with French fries.
