A delicious recipe for meat lovers! This dish is especially popular in holidays and festivals.
Ingredients:
- 1 whole small pig
To marinate
- 1 glass of olive oil
- 1 glass of lemon juice
- salt and pepper
- some thyme
- some parsley mixed with four minced cloves of garlic
- 6 onions julienne
For the filling
- 12 dry figs
- 12 dry plums
- 3 carrots
- 10 chestnuts
- 2 apples
- 1 cup of pinecones
- 2 onions julienne
- 3 minced cloves of garlic
- orange juice
- 1 glass of red wine
To grill
- nutmeg
- honey
- butter
- thyme
- 1 glass of orange juice
Preparation:
Put the pig into a large bowl and marinate it wit the above ingredients, leaving it for one night in the fridge. Next morning, prepare the filling: clean and chop the carrots, garlic, onions, apples and chestnuts. Put all these in a bowl and add the figs, plums, pinecones, red wine and a glass of orange juice. Salt them and mix well the filling. Then, prepare the mixture for the dressing: mix one cup of honey, 2 spoons of butter, some thyme and 1 glass of orange juice and blend until the dressing is ready. Stuff the pig with the filling, sew its belly and powder some nutmeg over it. Put it into the oven. About half an hour before the pig is ready, spread the whole pig with the dressing and put it back into the oven to get a fine, roasted colour.
